Huynh Thi Huoi runs the stall in District 10’s Le Hong Phong Market and uses pure can sugar, rather than the commonly used processed variety, to give his deserts a special brightness and taste.
One of the most popular dishes on Huoi’s menu is bi chung (steamed pumpkin), which is made by scooping out a pumpkin’s flesh and replacing it with a mixture of milk powder, condensed milk, coconut milk and egg yolk.
Another of Huoi specialties is che hat me which includes roasted tamarind seeds and coconut milk.
Huoi said that all of her ingredients are imported from Cambodia weekly to maintain the traditional taste.
